The floor, littered with napkins, is the universal sign that the food here is excellent.

The atmosphere is noisy and frenetic, with waiters loudly calling out the available portions from the middle of the bar. Their undisputed specialties are snails in spicy sauce (perfect for dipping bread), crispy pork belly strips, and *patatas bravas* that pack a real punch.

Melo’s (Lavapiés)

Located in the heart of Lavapiés (Calle del Ave María, 44), this Galician tavern is a monument to hearty food, boisterous energy, and rolled-up sleeves. Don’t expect luxury: here, you eat standing up, packed in tight, and sharing the bar with strangers.

The menu is incredibly brief and straight to the point, but the star dish is the legendary **”Zapatilla”**: a colossal sandwich made with a loaf of Galician bread, *lacón* (cured pork shoulder), and an indecent amount of melted *tetilla* cheese that oozes everywhere. It is greasy, it is huge, and ordering it alongside a portion of their giant croquettes is an absolute must if you want the full Lavapiés experience.

Hidden cocktail bars

Bad Company 1920 (Zona Gran Vía)

This place literally takes you back in time. If you get it right, you’ll pass through a vault-style door into a clandestine, 1920s-themed basement where cocktails are served in wild vessels—like teacups, plastic bags, or test tubes.

Jack´s Library (Chueca / Justicia)

At street level, it looks like a charming, quiet plant shop called *Bonsai Florist*. To enjoy the experience like a true local rather than a clueless tourist, take note of these final tips:

Forget reservations: the true, spirited tavern experience is all about improvisation. At classic spots like La Ardosa or Casa Amadeo, you don’t book a table; you simply arrive, elbow your way to a spot at the bar, and soak up the chaos. If there’s a line, be patient—it moves quickly.

Dress without the pretense: You go to the bars and clubs in Malasaña or Lavapiés to dance, sweat, and have a good time. Leave the overly fancy clothes at the hotel; a comfortable T-shirt and sneakers that let you stay on your feet for hours are the official uniform.

Plan your late-night transport: Remember that the Madrid Metro closes at 1:30 AM. If the night runs late, your best allies will be the “Búhos” (night buses departing from Plaza de Cibeles to all the city’s neighborhoods) or ride-hailing apps.

Have you visited any of these speakeasies yet, or do you prefer the atmosphere of traditional taverns?
